The layout change replaces thirty-two carts with twelve rolling benches on rails, taking tray area from 558 to 684 square feet. That is 126 square feet more canopy, a 23% increase, from the same room.
Annual yield goes from 25,600 g to 49,920 g — 45.9 to 73.0 grams per square foot. The upgrade produces 1.95× the legacy room on 23% more bench, meaning most of the gain comes from yield density rather than from the added canopy.
